White Chicken Chili - Makes 8 (1 c.) servings
Recipe:
1 T. EVOO
1 lb. chicken cubed
1 onion - diced
4 cloves minced garlic
2 cans Great Northern Beans
1 (3.5 oz) green chilies
1/2 t. cumin
1/2 t. dried oregano
1/2 t. coriander
1/2 t. salt
pepper to taste
juice from 1 lime
1/2 c. chopped cilantro
32 oz. chicken broth (or chicken base)
Optional toppings: sour cream, cilantro, cheese, avocado, tortilla chips
Directions:
1. heat EVOO in soup pot, then cook diced onion in it
2. drain and rinse beans
3. salt and pepper diced chicken - add to pot
4. add minced garlic, diced green chilies, spices, beans, and chicken broth
5. bring to a boil then reduce heat to simmer. Simmer 10-15 minutes.
6. Remove from heat, and add juice from one lime and the 1/2 c. chopped cilantro.
7. Salt and pepper to taste
We would rate this meal 4 stars for kids, 5 stars for adults.
Chicken Barley Chili - makes 10 (1 c.) servings
Recipe:
1 14.5 oz. can Italian diced tomatoes
1 (16 oz) jar salsa
1 (14.5 oz) chicken broth (or we just used buillion)
1 c. pearl barley
3 c. water
1 T. chili powder
1 t. cumin
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 lb. chicken - diced (or canned chicken)
optional toppings: cheese, sour cream, tortilla chips
Heat all ingredients - ready when barley is done.
McDonald's Cheeseburger Casserole
On 1 - 5 star rating system, we would rate this 5 stars for kids, 3 stars for adults.

McDonald's Cheeseburger Macaroni and Cheese
2 c. white sauce from Magic Mix (recipe will follow)
2 c. uncooked macaroni
2 c. shredded cheddar cheese
1 1/2 t. salt or garlic salt
1/2 c. ketchup
1 T. mustard
1 lb. cooked hamburger
1/4 c. dehydrated onion rehydrated in 1/2 c. warm water- drained
1 bag frozen mixed vegetables cooked.
Directions:
1. cook and then drain macaroni
2. Cook hamburger
3. Cook frozen vegetables
3. Make white sauce from magic mix
4. Combine all ingredients and heat through.
5. May garnish with fresh tomatoes if you have them.

This blog is all about having delicious food at home. But it isn't crazy hard to make stuff. It's all from your food storage, and it's also healthy. We rate every meal from 1 to 5 stars. We like the idea of trying recipes first, and then if you think you could eat the recipe twice a month, use it as one of your 15 recipes to develop your own personalized 3 month food storage shopping list.
